I just love the aroma of roasted capsicum . Roasted capsicum gives a distinct taste and flavor to every dish.Being a vegetarian,I get to eat only one type of pizza,and it always contain capsicum.This toast is so handy when I think of pizza but cannot wait to eat.Easy to make and rich taste.I love toasted breads.Sometimes it is very convenient to toast it on griddle by adding little oil on griddle and toasting both the sides of bread on it. For this recipe .
Capsicum : 1 cup
Onions chopped : 1/3 cup
Tomato chopped : 1/3 cup
Corn kernels : 1/3 cup
Spinach : 1/2 cup
Salt : 1/8 tsp or a pinch or as you need. ( I don’t add at all for low sodium)
Olive oil : 1/2 tbs
For these toasts , I don’t add any herbs except green chilies which are optional. I can handle the heat, so if you think you can eat chilies go for it.. This is the toast whose flavors rely on flavors of capsicum. Take a pan . Keep it on medium heat and add oil. When oil is hot add onions and cook by stirring in between for 3-4 minutes. Then add tomatoes and cook for further 4- 5 minutes. After this add capsicum, boiled corn kernels and spinach . If you want to add chili you can add at this point or sprinkle some black pepper.
Turn of the heat when you can smell the flavors of capsicum. Toast the bread slices in toaster. I used wholemeal bread but you can use any type of bread as you like. Spread some guacamole on bread and also spread this filling on it.You can add some tomato sauce on it if you want. Garnish it with shredded Parmesan. Cheese gives it beautiful flavor and taste.This is the simple toast , easy to make and full of nutrients.
