Hello , I want to share this simple and easy colorful mix veg recipe . I love mix vegetable curries. I always add peas and potatoes to most of my dishes. I have to pay attention if I want to skip peas and potatoes.There was a time when I felt that no mix veg is complete without these.Gradually I changed my taste I learned that there is something more to taste than only peas and potatoes.
Now I have become a fan of capsicum.My mix veges are never complete without capsicum. Green capsicum is all time favorite. But red and yellow varieties rev up the aesthetics and taste of dish.most of the time I cook at home.
But I am lazy too. I cannot skip the cooking part but I always try to cook in one pan. This becomes possible by adding different veges at different stages of cooking. Vegetable of different colors have different flavonoids .Tofu infused with the flavors of onion and capsicum makes this mix veg irresistible.
I have stopped eating any grain products in dinner. To compensate , I have to cook more veges and lentils, being vegetarian.Cooking curries takes a lot of time and hard work. These sauteed veges are life saver and tasty. Also provides lot of nutrients.
Different veges cook at different times. Like if we cook capsicum too much it becomes mushy.And the crunch is gone. So instead of coking in different pans I just add them at different cooking stages.
Green Capsicum : One cup
Red Capsicum : One cup
Onion : Half cup
Red cabbage : One cup
Tofu : One cup
Cumin : One Tsp
Oil : one Tbs
Salt : a pinch / 1/8 tsp or according to taste
Pepper : according to taste
Peel onions wash and cut them vertically. Wash cabbage, capsicum and cut Julienne’s from them.
Heat the pan on stove. Add oil. Then crackle cumin seeds. When you can smell the flavors of cumin add onions. cook onions for 5 minutes on medium flame stirring.After five minutes add cabbage. Cook for another 5 minutes. After 5 minutes add red capsicum, and green capsicum. Cook for another 7-8 minutes. Don’t put any lid on pan. It will make veges mushy. We want them to be crunchy. Check if veges are cooked but still crunchy on the texture side. Add cut cubes of tofu at the end and remove it from heat. Sprinkle salt and pepper.
