Hey there, Today I am making this yummy veggies curry which is known with the name of pav bhaji. This dish is also available as street foods in India. This easy and simple dish can be made at home. It is yummy as well as healthy. Pav is kind of soft bread which is eaten with raw onions and some pickle. I eat bhaji along with any bread or simply use it as a dip for eating with carrots and cucumber. Traditional pav bhaji use lots of butter and is a bit spicy. But when you prepare at home, it is totally up to you how to make it.
Homemade pav bhaji is delicious as well as healthy. A lot of different vegetables give a distinct colour and taste to the dish. Also if you have left a few different veggies in the fridge, you can easily make this mixture of veggies. Boiled and mashed veggies give a very good smooth and chunky texture.
Though this dish uses a generous amount of butter, you can replace the butter with any other good oil to make heart-healthy version.
- 2 tbs Olive oil
- 1 tsp cumin seeds
- 1 medium onion
- 4 segments garlic
- 1-inch ginger
- 3 medium tomatoes
- 1 Medium capsicum
- 2 small green chillies (optional)
- 1 cup peas
- 2 Cups cauliflower
- 2 medium boiled potatoes
- 2 medium carrots
- 1 tsp salt (or as per taste)
- 2 tsp pav bhaji masala (or as per aroma)
- half tbs lemon juice (optional)
- 1 tsp turmeric
peel onion, garlic, ginger and carrots. Wash all the peeled veggies as well as capsicum, cauliflower,tomatoes and green chillies.
Chop onions, garlic and ginger.
Boil cauliflower, carrots, peas and potatoes. Either boil them in pressure cooker or in boiling water. We have to boil them to make them smooth in texture.
Take a skillet and add olive oil ( or butter) into it. When oil is heated, add cumin seed and heat until cumin seeds start to splutter.
Add onions into the skillet. Saute them on medium heat until they get light brown.It normally takes around 10 minutes.
Then add chopped garlic and ginger. Cook 5 more minutes. When you see the change in colour of garlic and ginger, add turmeric. Mix it properly with the onions. Add pav bhaji masala into it.
The next step is adding chopped tomatoes. Cook it further until the tomatoes become bit mushy. It takes around 15 minutes. Add capsicum, green chillies and cook for 5-6 minutes.
Next step is adding chopped capsicum to the cooked tomatoes.
Mash potatoes in the skillet. Mix well. Also, mix boiled vegetables and mash them with a potato masher in the skillet.
Cook further and add the vegetable stock to make it a bit thinner.
Simmer on the heat for 8-10 minutes. Sprinkle some cut coriander on it and serve with soft bread rolls.
This pav bhaji serves 4. It tastes good with onions and tomatoes or you can team it up with anything. I don’t add lemon juice to it because it becomes a bit tangy in taste. But due to personal preference, I like it without lemon juice.
You can add 1/2 tbs of lemon juice to it at the end. Serve with soft bread rolls or any bread.
